This is my go-to biscuit recipe. If you want a biscuit you can roll and cut out, it looks impressive and it tastes fab.
I found this recipe in a Hugh Fearnley Whittingstall book. Hugh says “if you like digestive you might think your favourite brand is hard to improve on but once you’ve made your own you’re never look back”
We all have someone on our gift list who loves to devour an edible gift. Biscuits or Cookies are such a good gift, it tastes good and looks so good too. These biscuits are the kind that can be rolled and cut into lovely shapes. In our house were very fond of love hearts but you can choose any shape at all.
Ingredients make 35 to 40 (Some to give away and plenty to keep too)
250g of wholemeal flour or wholemeal spelt flour
250g butter cut into small cubes and slightly softened
250g of medium oatmeal
75g of soft brown sugar
2 teaspoons of fine sea salt
2 teaspoons of baking powder
about 1 tablespoon of milk
I added a packet of Chocolate Chips, you could add raisins, nuts or other fruit or leave them plain and eat with cheese, meats or páte….yum
Method
rub the flour and butter together until they resemble fine breadcrumbs. Add the oatmeal, sugar, salt and baking powder and mixed together with your hands. Add a little milk a few drops of the time until everything comes together into a slightly sticky dough.
Roll into a flattened ball and wrap in clingfilm and put into the fridge for half an hour to rest and firm up. You can make in advance and keep in the fridge for a few days, it gets very firm so take from the fridge 1 hour before rolling.
Flour a board, rolling pin and the dough and roll out to 4mm thickness. It is very crumbly and short. You can roll between floured clingfilm or greaseproof paper. Now you can get creative with your cookie cutters. Use shapes that are 6-7cm.
Put on a baking sheet lined with baking parchment. Put into the oven at 180°C and bake for about 10 minutes checking regularly after the first five minutes. They should be golden brown around the edges and lighter coloured on top.
There are lots of creative ways to present your edible gifts, boxes, tins and jars or a pretty plate means they are ready to go!
Of course, these digestives are best served on a beautiful platter and you can, of course, I do have some lovely Platters ready-made (just like Blue Peter)
